People ask: how long should bulk fermentation take? The answer they want is a number — four hours, six hours, eight hours. The answer that is actually correct is: it depends on your kitchen temperature, your starter activity, your hydration level, and your flour. The elapsed time is a rough guide at best. The dough tells you when it is ready. You have to learn to read it.

He learned this the slow way, over about a year of baking before he trusted his own judgment over the recipe’s suggested timing. The spiral notebook is what eventually convinced him. Looking back at 50 or 60 entries, the correlation between ambient temperature and fermentation time was clear enough that he could not ignore it.

What Temperature Actually Does to Dough

Fermentation is a biological process carried out by wild yeast and bacteria in the starter culture. Like most biological processes, it speeds up when warm and slows down when cold. At 78 degrees Fahrenheit, the same dough that takes six hours at 68 degrees might be ready in four. At 65 degrees, it might take eight hours or longer.

This is not a failure of the recipe. It is a feature of the process. The recipe cannot know your kitchen temperature. The recipe is written for a kitchen of roughly average temperature — usually somewhere around 70 to 72 degrees Fahrenheit — and if your kitchen deviates significantly from that baseline, you will need to adjust. The recipe cannot tell you when to adjust. The dough can.

What properly fermented dough looks and feels like: it has increased in volume by 50 to 75 percent, it is domed rather than flat on the surface, it jiggles when you move the container — a gelatinous, airy wobble rather than a dense shift — and when you fold it, it feels extensible rather than tight. These are tactile judgments that take practice to make reliably. They cannot be reduced to a number of hours. They require you to handle a lot of dough at different stages until you know, by feel, what ready looks like.

How Smith Uses Temperature as a Guide

Before every bake, Smith reads a thermometer he keeps on the kitchen counter. He records the temperature in the notebook. Then he writes down an estimated bulk fermentation start time and — based on the temperature reading — a range for when he expects to start checking the dough. In summer, that range might be three and a half to four and a half hours. In winter, it might be five to seven hours.

He does not set a timer for the end of bulk fermentation. He sets a timer to check the dough at the start of his estimated range, and then he checks it again every thirty minutes until it meets his visual and tactile criteria. Sometimes it is ready at the early end of the range. Sometimes it runs past the late end, which usually means the kitchen was cooler than he thought or Clyde was less active than usual.

Either way, the temperature reading is the starting point. Without it, he would be guessing from the recipe alone, which is what he was doing for his first year of baking — and why his early results were inconsistent in ways that were hard to diagnose.

The Dough’s Schedule, Not Yours

Smith has had to abandon bakes because the timing did not work with his schedule. He has started loaves on Friday evening and had them ready to bake Saturday morning when he expected Sunday. He has started Saturday morning bakes that stretched into evening because the kitchen was cold and Clyde was sluggish. The dough does not adjust to his schedule. His schedule adjusts to the dough.

He does not find this frustrating anymore. He found it frustrating in the first year, when he was trying to plan weekend baking around other commitments and the dough kept running past its expected window. Now he plans more loosely — he starts a bake when conditions are right and accepts that the endpoint is approximate. This is easier when you know the signs to look for, because the signs are reliable even when the timing is not.

Fermentation has a schedule. It is not yours. That sentence took him about a year to fully accept, and another year to stop fighting. Now it is just how baking works, and the bread is better for it.
